INGREDIENTS
¼ cup extra-virgin olive oil
¼ cup tahini
2 to 3 tablespoons lemon juice
2 teaspoons Dijon mustard
1 teaspoon maple syrup
½ teaspoon fine sea salt
Freshly ground black pepper, to taste
2 tablespoons ice-cold water, more as needed
1 tsp minced garlic cloves
small splash of apple cider if you want a bit sour
Emersion blend until right consistency
