Tahini Recipe

INGREDIENTS
  • ¼ cup extra-virgin olive oil
  • ¼ cup tahini
  • 2 to 3 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon maple syrup
  • ½ teaspoon fine sea salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons ice-cold water, more as needed
  • 1 tsp minced garlic cloves
  • small splash of apple cider if you want a bit sour
  • Emersion blend until right consistency
